A gourmet’s destination

In Nouméa you will find countless restaurants that celebrate the essence of French gastronomy. In the middle of the South Pacific, you will be able to indulge in all the regional specialties of France: Alsatian choucroute, petit salé, raclette and even cassoulet! Some restaurants, such as Chez Toto, are all about traditional cuisine! For a more exotic approach to local gastronomy, try the Pandanus or L’Assiette du Cagou. You will enjoy fresh produce prepared with influences from around the world. Enjoy a filet of freshly-caught fished, just fried and served with a side of sweet potato and coconut gratin! As you tour the island and discover charming villages and welcoming tribes, you will taste some amazing traditional dishes. Venison ceviche, green papaya chutney, pickled spicy vegetables, homemade jams and exotic preserves are just a few examples of New Caledonian basics. Once on the East coast, you must try Bougna, the Kanak staple dish. Taste the authenticity of a dish that is ancestral. Prepared with tubers, bananas, meat or fish, Bougna is then wrapped in banana leaves and steam-cooked inside a hole dug in the ground.
